Mail 'All Inboxes' preference not sticking

I've been having the same problem with IOS Mail for months. I have several email addresses, including iCloud and Gmail, all managed via the Apple Mail client. My default setting for receiving mail is 'All Inboxes'. For some reason this switches intermittently, without warning to the 'Gmail' inbox. Everything is fine for a while after I switch back to 'All Inboxes'... until it happens again. Does anybody have any idea why this is happening? For reference it's an iPhone XR running iOS 14.7.1.

All mails are received in their respective Inboxes.

"All Inboxes" is a feature only for displaying all the received Mails in one place. No matter what your settings are the mails do continue to get received in the respective Inboxes unless it is overridden by a rule at the server's end. This rule can only be set using a browser on Mac/PC etc.

Many thanks for taking the time to reply.

Unfortunately, it doesn't help me very much. My problem is that my phone is arbitrarily deciding which Inbox to display: switching from 'All...' to just Gmail. (See screenshots.)

All of the relevant emails are there but the default "view" keeps changing.

How can browser server settings control my iPhone view preferences?
