Your beef is with Microsoft, not Apple. Your version of Office will not run on any version of macOS past Mojave. Microsoft has updated Office to run on current version of macOS but they have chosen to make you pay for the updated software. Microsoft also wants you to pay for a subscription for their updated software. Complain to Microsoft.

Going backwards is a VERY bad idea. However you likely need an upgrade on Office for Mac. Office for Mac 2019 will run and only costs about $125 on Amazon. Get the Student and Home edition.

This include Excel, Word, PowerPoint and Outlook.

There are also free web based options such as LibreOffice. https://www.thebalancesmb.com/best-microsoft-office-alternatives-4582783 has other alternatives.

What you are being prompted for is Office 365 which you can get for a monthly fee. The advantage of Office 365 you can access it from almost any device that accesses the Internet and you will never have to upgrade again as Microsoft pushes upgrades to you so you always have the most up-to-date version. You only have to pay a subscription fee when you use it. So if you only use it 2-3 x a year then just pay for those months. If you use it daily then decide if you want 365 or the old fashioned method of using a downloaded version.

That’s the Microsoft Office 365 subscription.

If access to Office documents and Office tools are an requirement and you do not wish a subscription, you can purchase Office 2019 or the upcoming Office 2021 from Microsoft, or can use the LibreOffice package (free), or can use tApple iWork apps (free) (Pages, Numbers, Keynote) to read and write many Office documents.

If this was an upgrade from an older macOS version… There is no uninstall and no downgrade available, your options there are to restore your backups from prior to the upgrade, and you’ll need to revert to Mojave to still have 32-bit apps such as Office 2011 and earlier, and that’ll revert all changes made since the upgrade. Ypumcan install Mojave and Office 2011 if you’d prefer.

If this Mac was first released with Big Sur, then it cannot run earlier versions.

Big Sur is not telling you to upgrade a paid app, Microsoft is. If you insist on Microsoft, you have little recourse. Going backwards OS-wise from Big Sur is not a good idea.

FreeOffice is a very nice alternative to MS Office as is LibreOffice. There are other free, mostly compatible, office suites out there.
