Hi my phone was stolen and I'd like to make sure that it can't be used for payments or whatever.Should I just remove the device from my Apple ID?

Do not remove the device from your Apple ID. If you do then you will remove the Activation Lock and then the device can be used by someone else as a new iPhone.

Follow the instructions in this guide published by Apple ➔ If your iPhone is lost or stolen.
