I have an Apple Watch three series and I need to uninstall the update now I can’t even hear anything

Updating is a one-way street. You cannot go backward. Make sure the watch its not muted. See the 'Mute your Apple Watch' section in:

Change the audio and notification settings on your Apple Watch - Apple Support
