Under System Preferences > Internet Accounts, are you able to select the Game Center account, then the - symbol to remove the account? The following resource covers what this should look like:

Play games on your Mac

This is what it should look like in the App Store with your name on the bottom. If you don't see that, you may need to sign into the App Store with your Apple ID. Click Store in the menu bar > View My Account > to see if it's signed in and access your account.

If you open the App Store app > click on your name at the bottom > click on View Information > you should see Game Center and be able to turn it off from here.

You don't want the account to be associated with Game Center?

All you have to do is select the Game Center account in System Preferences->Internet Accounts, and click "-".

I must be missing something...
