How do i stop the application demo in the app store? the screen has only black edges, no controls are visible. This is a new iPad air 4

That is a great idea, and I had already tried it. After that, I was really desperate and no longer cared! I deleted the App store ap. Fortunately, all that happened was that I opened the app and evereything was a again normal. 8-)
You need to disable Video Autoplay in iPad Settings:
Settings > App Store > Video Autoplay - set to OFF
