Wish you had mentioned the name of your iPhone model. It would have been helpful to know whether you are using a physical SIM card or an eSIM.

Just FYI - Your SIM card does not hold any of your data on it. It just has the credentials to log on to your service provider's network. That information on the SIM card will not change.

All of your data is stored on the iPhone itself and not on any SIM card(s).

If you want to return your iPhone to factory settings without deleting your data then you can open Settings âž” General âž” Reset âž” Reset all Settings. This will return all settings to factory settings and your iPhone will not lose any of your data.

If you want to erase all the data and return your iPhone to factory settings just like when it was NEW then you can open Settings âž” General âž” Reset âž” Erase All Content & Settings.
