I recently switched from iPhone 8 to iPhone 12 and immediately started experiencing daily severe headaches and eye strain. Anyone having similar experience? Has Apple made any announcement regarding this?

It doesn't matter whether anyone is experiencing this. You are and that means you should go see your doctor. I can certainly tell you I have no such issues with my phone. I don't personally no anyone who is and I know lot's of people with iPhone 12.
Ps: You could be one of the very few rare individuals who has hypersensitivity to OLED displays You may want to get Blue Blocker Glasses. But again, your doctor should be able to advise you.
The first thing to do is to see a doctor. Some people have a problem with OLED screens, but get it checked out medically first.
