Apple Watch 3 won't install WatchOS 7.6.2

Hello,

Yes, I know this is a fairly "old" watch, but Apple is still selling it. So, I think it's reasonable to expect it to be doable.

We've gone a couple of rounds of unpairing and setting up as new; we've been able to get the OS to 7.0.2, but no further. The download of the update begins and makes a lot of progress, but then stops with the error: "Cannot Install Update: To install watchOS update, unpair your Apple Watch and pair it again in the Apple Watch app on your iPhone." Tried that, no dice.

Thoughts (aside from "buy a new watch")?
