if i bought an iphone 11 in US can i get the SIM card tray converted to allow for dual nano SIM cards?

No, if its the US variant it will support one physical and one e sim. You cannot get it converted to both physical.
Certain countries like Hong Kong have support by default by dual physical sims. Hope this answers your question.
