Your question, "What is average time it takes to transfer data?" has no good concrete answer.
There are so many variables. It depends on the amount of data being moved, the method of data transfer (wired, wireless, USB, Thunderbolt, etc) and the health of the transfer connection and devices.
1-5 GB of data between two computers sharing a healthy, typical home network may only take a couple minutes wirelessly.
100 GB of data maybe 15 minutes.
Transferring 500-1000 GB of data between two computers or from 1 HDD to another by USB could easily take many hours.
EDIT - older, slower machines running older, slower OSs will take longer than the newest tech.

Thank you so much. Your quick response has been very helpful. We only needed reassurance of the 2 hour time since we never, ever transferred data from an "old" 2009 Mac to a new M1 Mac. We felt so much better knowing the 2 hours was not a bad amount of time. Thanks again.
