Why was the 5 hour auto-lock option taken away?

During the last IOS update it seems that they have taken away the 5 hour auto-lock option.

Why was this done and is there a way to have the iPhone lock with a longer time than 1 hour?

Ah OK, now I understand what you're looking for.

It is not Auto Lock setting, but Passcode lock.

You can set the lock time to 4 hours.

Settings > Touch ID and Passcode > enter your passcode > Require Passcode and select 4 hours from the list.
