I would like to update to iOS 15 when it comes out but my computer is stuck on Catalina. Will there be any compatibility issues between OS Catalina and iOS 15?

There shouldn't be. At most it may require a small update to Finder / Music App to access the iPhone. This will not require updating the macOS version.
