Having someone else use an Apple Watch paired to my iPhone

I have a 2nd gen iWatch my wife never used and now I would like to give to my daughter who is 10 and does not have a phone. I know you have to pair it to a phone to get the watch to work, but after this I would like it to have minimal access to my info, minimal alerts and essentially just have her use it as a watch and whatever apps sit on the watch itself without needing to communicate to my phone. Has anyone done this and are there any important considerations? I’m wondering specifically about how to NOT have the Activity sync with my phone. Thanks!

Unfortunately, you'd need an Apple Watch 4 or later to do this in a way that your daughter isn't getting your information and the watch isn't syncing to your activity.
