safari browser goes blue

Hi, I've just updated to Safari v15.0. The top part of the browser goes dark navy blue almost black on some sites and intermittently goes white again. I don't want it blue or black I want it the same as the previous version but can't find how to change it. How do I stop the colour changing? I have a Macbook Pro running Big Sur. Thanks in advance.

Thank you VikingOSX for your informative reply. I'm in Australia, probably not in your time zone. It's already 23 Sept 2021 here. :) This feature was driving me crazy last night. So I Googled for the second time in less than 12 hours and I found this article which wasn't available the first time I googled. It's good that I found out how to turn it off before I reverted back to the previous version of Safari.

IMHO this feature is a dreadfully big fail. I gave some feed back via the Apple site last night too.

As I've mentioned in some other replies... It was driving me crazy last night. So I Googled for the second time in less than 12 hours and I found this article which wasn't available the first time I googled. That was before I received any replies to my query. It's not in General, it's in Preferences > Tabs

The meta tag theme-color is part of the HTML standard now, and the only blame to be assigned to Apple is defaulting that Safari Preferences Tab setting to on. Otherwise, it is, or soon will be a feature in all current browser vendor updates. It is driven by the website designers who choose to use that meta tag to force custom colors for the browser toolbar and tabs.
