Quick start

How long should it take to finish a "quick start" on my iPhone? Will it also transfer my apps over?

This is dependent upon how much data you are transferring and how fast is the established connection between the two iPhones. NOTE that all apps are actually downloaded from iCloud while all the apps' data is transferred from the old iPhone. You may finish the transfer in about 20 minutes or so however wait for hours for all the apps to be downloaded. If you are using iCloud for Photos and Messages, then that transfer will also happen in the background after the Quick Start transfer is completed.
