I updated my iphone to the newest IOS15 and during the update, a problem came up, my phone went into the recovery mode and i couldnt leave it. Thus I had to reset my iphone to default. As my luck I, didnt do any backup. My question is, if there is any method to get my pictures and videos back?
Sorry no. Unfortunately, you underestimated the importance of creating a backup on a regular basis.
No backup = No recovery... unless you had iCloud Photos enabled (should be this case, your photos should still be synced in your iCloud storage).

Unfortunately, there is no backup and therefore there is no recovery.
If you used iCloud for Photos then you can recover those and they will appear on your iPhone once you sign into your Apple ID. I have a feeling that you did not use iCloud for Photos as well.
