Center stage setting gone in iOS 15?

For iPadOS15, Centre Stage settings are accessed from the Control Centre whilst a supported App is running. Swipe downwards from top-right of the screen:

Be aware that Centre Stage is only supported by 2021 models of iPad Pro, the iPad9 and iPad mini6.

You’ll find that much has changed in iPadOS15. I strongly recommend that you review the iPad User Guide for iPadOS15 - as this is a rich source of essential information often overlooked by Users.

No idea about Zoom app.

Please try also a forced restart of your iPad (after using FaceTime once):

• On an iPad with a Home button: Press and hold the top (power) button and the Home button at the same time. When the Apple logo appears, release both buttons.
• On other iPad models: Press and quickly release the volume up button, press and quickly release the volume down button, then press and hold the top (power) button. Only when the Apple logo appears (it might take 20-40 seconds), release that button (ignore all other screens that might appear).

See if this workaround can help you:

Use FaceTime once.

When done, check Settings>Facetime.. and see if the Center Stage option now appears.
