MacOS Catalina Automatic Updates
If I turn on automatic updates and all five options available will it just be Catalina that will be kept up to date or will this update to Big Sur automatically, which I don't want to do at this time.

Yes it only updates Catalina, it does not automatically upgrade your OS to macOS Big Sur.
Generally though I would have my mac set to automatically update anything, given the propensity
for Apple updates to introduce bugs rather than improve anything
At the beginning of the week apple released Safari 15.0, soon after users were reporting they were no longer
able to connect wither banks, medical insurers etc etc.
If you were on automatically update then you were immediately compromised.
I only update my OS after about a week to a month after a release so I can monitor what people are saying
about it and if it introduces new problems.
