Apple Watch Assistive Touch

Hello! I am trying to use the new gesture feature for assistive touch on my Apple Watch. For background, I have an Apple Watch v5 running watchOS 8 and an iPhone 12 Pro running iOS 15. When I go to the accessibility menu on the Watch, I do not have an option for Assistive Touch or Gestures, only Side Button Click Speed, Touch Accommodations, and Auto-Answer Calls. Can someone please help me to understand why I cannot use the new Gestures feature for watchOS 8?
