I got my new iPhone yesterday and began the long process of restoring it from my iPhone 12 Pro backup. It appears to be stuck and the backup will not complete. As far as I can tell, the only thing that is missing is some songs in my music library. The backup says I have 1.6 GB left to restore. What should I do?

It wasn't my wi-find connection. It was my music library that prevented the update from continuing for whatever reason. Since I didn't hear back on this thread, I just stopped the music download, then upgraded the phone to IOS 15 and after that, the music download continued. I lost about 5 songs as far as I can tell but wasn't a big deal to me.

We see that you were experiencing some delays in regard to your update. We're happy to help investigate some options for this.
Is this still an active concern that you are facing? Is your iPhone connected to a good Wi-Fi or 5G network for the purpose of restoring? If so, have you had a chance to restart the device at any point since beginning that process? Please also review Restore your iPhone, iPad, or iPod touch from a backup and ensure you have completed all steps contained there.
