(Battery condition shows as normal.)
I've noticed 2x this week, battery at about 60% when this happens. I flip it open from dead sleep, a cold start; I see the screen and then screen vanishes. (?) So I close lid, and re-open. I get the image below. Plugged into charger, going back up to 100%. What's the story here? Cycle count 374, condition normal.

You can try an SMC reset upon Intel Macs, or a general reset on M1 Macs.
If that does not fix the problem, Apple will not be doing anything more in the immediate future.

When criticized about this, Apple's response was to REMOVE the estimates.
The estimates of battery life percentage are so notoriously inaccurate, they are said to have been removed in the latest updates.

you mean, just go by battery icon and ignore the percentage % number?
did a full diagnostic; perfect condition. battery shows normal. did the SMC reset and also the NVPram reset. Never heard to always run off the plug- just the opposite, in fact.
That computer is a battery-CAPABLE device. It is not optimized as a battery-operated device.
Your computer performs best when connected to AC power. It can use the full output of the Power Adapter AND when doing especially challenging work will also freely "borrow" power from the battery. In some cases, even with the power adapter connected, the charged state may even decline during stressful work.
When used only on battery, your computer has no extra cushion of power, and will perform more slowly. However, for ordinary non-stressful tasks this may not be objectionable (possibly not even noticeable.)
In general, you should ALWAYS connect AC power when it is possible to do so, and only run on batteries (which will be somewhat slower) when no AC sources are at hand. There are three micro-controllers cooperating on battery and charging issues, and your Mac will NEVER over-charge.
