Refund Apple Store Card

Short Version:

Paid in the UK for an iPad with trade-in in Italy, got a Gift Card that's only usable in Italy

Detail:

I'm in the UK, I bought my gf an iPad on Apple Online Store in Italy, with a trade-in of her old iPad (paid with my card and the trade-in should be issued to my card).

She went to the local Apple Store and picked up the new iPad, traded in her old one.

However, the local Apple Store couldn't issue the trade-in amount to my card because they needed the physical card that was used to pay (which is in the UK and this requirement was not stated prior to purchasing).

So instead they gave her a Apple Store Gift Card that's worth 135€, which can only be used in Italy.

I just did an 1-hour call with Apple Support and their answer in short was "definitely not usable online except in Italy Apple Online Store or Italy App Store ; may be possible to use in the UK Apple Stores (offline)".

So my question is: Can that 135€ of Apple Store Gift Card be refunded into my bank account (which they should) ?

This is not Apple support and we are all other users here and do not work for Apple, so there is no way that we can answer what would be a legal question. You will need to deal with Apple. My personal opinion: Companies have their policies and your dealing with multiple countries/stores/trade ins is a definite problem for you. Refunds, etc. are always issued to the card used and you do need to present that while getting the refund - obviously she could not, so they did the next best thing. Good luck!

Posting here is a last resort for me, I have contacted Apple UK, they put me on a call with Apple US, and the advisor from US called UK customer services and sales team and Apple Store, none of them knew what to do.

This probably would have worked pre-Brexit but now it doesn't. Prior to that Apple treated the EU as one entity so your gf could have used it toward a UK purchase. Now she can only use that card anywhere in the EU (not just in Italy). I'm not sure there is any way around this other than for her to use the card on something else.
