All data did not transfer when using Migration Assistant--did not receive any security code during the process--did not receive any download, GIF keyboard or extensions...using 2017 MBP to 2021 MBP. How do I retrieve them?

To verify, did you select all data to transfer over to your new Mac? Did you check to verifying you’re signed in the correct user account? Was there enough storage space to migrate all your data to your new Mac?
Also, were both Macs on the same version of macOS? It’s a good idea to review the article to make sure everything was set up correctly when you did the migration. If the issue continues, you could create a Time Machine backup and restore it to your new Mac that way:
