Stuck in boot

I tried to upgrade my mac mini to Big Sur, it is not compatable, so now I am in a death loop trying to install the old software. Ive tried to use option R, Option T, T, C to get it to boot to a dvd. I am at a loss, I am not interested in trying to save the files anymore, just want to go back.
