Apple Mail - out of office - subject heading

I have set up an out of office reply for Apple Mail and it is working but where do I write what I want the the subject heading to be? It is not the same as the description of the rule.

MacBook Pro 13″, macOS 10.15

FWIW, out of the office replies may alert spammers that they have found a valid email address.

And, if using out of the office automatic replies these should be set up on the email server rather than in your email client. The reason being you could get into a race condition where your auto reply replies to someone who has also set up an auto reply. The result is a race condition where you both are automatically replying to each other repeatedly.
