Inability to delete Chess app and others is really hindering my ability to stay within iCloud space.

How do we get Apple to quit giving us things that use up our Cloud space? Or how do I prevent it from being backed up to the cloud?

MacBook Air 13″, macOS 10.14

First, Chess doesn't backup anything to iCloud. You can disable apps backing up to iCloud in System Preferences > Apple ID > iCloud & iCloud Drive "Options".
