Yes.

I unlock my personal 2016 15" MacBook Pro, and my company 2017 13" MacBook Pro using my Apple Watch.

I assume that if I had more Macs, I could unlock them all using my Apple Watch (assuming the Mac is new enough to support the minimum Bluetooth version needed).
