Apple Watch & Electric Scooter

I've enjoyed my Apple Watch 6 for the past year, but since I started commuting on an escooter, it's been frustrating. I've read enough that I should select Other as a workout, which I've edited so that the metrics are Duration & Heart Rate. I still don't think it's particularly accurate, but unfortunately, it's the best for now it seems. However, I frequently forget to start or end the workout, and then I have inaccurate data for the day, which apparently I can't edit.

So, what is my question? I just want to make sure I'm not missing something. My ideal solution would be to be able to select the workouts that the watch recognizes; for instance, I'm either walking or on my scooter. If I want it to record my bike, I have to specifically select that. I guess another solution, which seems intuitive to me, but I don't think exists, would be a quick button on the control center that I could turn off any activity recording.
