Whenever I try to enter a New Contact, on my 2021 MacBook Pro 13" with macOS Big Sur 11.6 installed, in the middle of typing the info, Contacts suddenly flashes out of what I'm trying to type and shows another contact that is irrelevant. I can't finish entering complete info for any New Contact without this happening...?

Am aware of the Google issue for creating new Contacts but not really positive of the solution. Hear some others suggesting removing the Google side of thing, create the new contact associated in iCloud. bUt beyond that - not much more here :-((
Is the Contacts Application associated to only iCloud account or is a Third Party like Google involved ??
My husband has found he's having the same problem on his 2020 MacBook Pro with Big Sur 11.6; however he also has a 2017 MacBook Pro which is NOT having this problem, even though it also is using Big Sur 11.6. APPLE--what is going on?

Try the following: boot into Safe Mode according to Start up your Mac in safe mode - Apple Support and test to see if the problem persists. Reboot normally and test again.
NOTE: Safe Mode boot can take up to 3 - 5 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
