Your Apple ID is what is used to sign in to iCloud and the iTunes & App Store. If you sign out of iCloud, you are essentially signing out of your Apple ID, but you'd still remain signed in to the iTunes & App Store since that's a separate sign out.

Keep in mind, staying signed into iCloud is a good idea if you use Find My services. If you ever lose or have your device stolen, Find My is what helps locate and manage your device.
