This is the iTunes Store forum, it uses your account payment info and is changed by following the steps in the support document I linked to above.
Do you mean your physical item orders from the Apple Online store?
If so then log in to your account at https://secure2.store.apple.com/shop/account/home and scroll down to Payment, then click on Edit under Payment Method.
You can also edit that at https://appleid.apple.com
