Pages docs don't give me the option to share via email
How do I add the share-via-email option to my pages documents?

Pages only shares with Apple Mail, not other Mail clients that you may have seconded to Apple Mail. Recent versions of Outlook have a separate sharing extension that needs to be enabled to that Mail client to be on your Sharing menu.
Visit System Preferences > Extensions > Sharing and see if either Apple Mail, or Outlook extensions are selected.
