What iOS version are you running. You may need to update your iOS: Update your iPhone, iPad, or iPod touch
Have you tried restarting your iPod and trying again?
Are you connected to Wi-Fi, or are you trying to listen to music offline?
Connect to Wi-Fi on your iPhone, iPad, or iPod touch
Add music to iPod touch and listen offline
