All of the available drivers for the ET-2600 on Epson's site were released a month before macOS Big Sur was released. The rhetorical question is how Epson could have tested these drivers on any released version of Big Sur? Consequently, there may be Catalina support, but it is little surprise that there are issues with Big Sur, nearly a year after the drivers were posted.
To rid yourself of Epson software dependency once and for all, I suggest that you download the trial VueScan Professional scanning software that supports the ET-2600 without any Epson software or drivers at all. This is paid, non-subscription software.
I purchased VueScan Professional back in 2010 for a Canon scanner that was abandoned by the vendor. That scanner still works with the current version of VueScan on my M1 mini running macOS 11.6. I have never paid VueScan any software upgrade fee in those eleven years. I am not compensated in any way by the VueScan vendor for mentioning their product here.
