If you have an iPad that is running iPadOS 14, or later, and you are using the default, free iOS/iPadOS Notes app, make sure to pick the pen with the letter “A” on it from the lower tool palette in the iOS/iPadOS Notes app.

Thanks for the reply. I figured out that the problem was that Word doesn't yet support this feature, but Pages does, which is fine, as I can share Pages files in Word if I want. I'm trying to write something difficult, and somehow find scribbling with the pencil less intimidating than typing. I've just been scribbling with the pencil on my iPad, while watching what I'm writing magically appear as text on my new MacBookAir, where I'll ultimately be editing it. Win/win
