Editing iPhone 13 ProRAW files washed out

When I edit a ProRAW file from an iPhone 13 Pro on macOS 11.6 it immediately shows as washed out. This happens when I hit the edit button in the Photos app (before doing any editing). It's also really hard to get the image back to anything close to the original JPG preview. I am a serious photographer so I know that RAW files are different than JPG, and that in the photos grid/preview view you're looking at an embedded JPG, but this is very different.

This doesn't affect iPhone 12 proRAW photos, nor does it affect other camera RAW photos (ie: Fuji .RAF). When the edit button is hit they show a reasonably similar image. The iPhone 13 ProRAW files also edit just fine on iOS on the iPhone or iPad.

Here is what I see when I view the file (yes the WB is way off hence wanting to see how the RAW controls are, but I see similar examples in other files):

And as soon as I hit edit this is what I see:

Here is another example:

Has anyone see this? Again, I know that RAW is different from JPG, but I've never seen this sort of difference before, and from only one camera. Unless the ProRAW format changed drastically between the iPhone 12 and 13, I'm not sure what's going on here.

iMac 27″, macOS 11.4
