There has been nearly 6 or 7 updates to Big Sur since it was released. It depends on what model and year Mac you have whether or not you can run Big Sur. See this Apple document to see if your Mac qualifies to run Big Sur: macOS Big Sur - Technical Specifications

To clarify, the related article (Sync your iPhone, iPad, or iPod using your computer) only has instructions for Catalina and previous. there are no instructions for Big Sur. When I try to sync my new iPhone 12 to my macbook pro, I get an error message that says "The iPhone “iPhone” cannot be synced. The required file cannot be found." I have posted about that in another question on the community boards.

the update release called “Device Support Update” — brings fixes to make sure updating and restoring iPhone and iPad with a Mac is working correctly.

Hi folkdemon,
Looking at the article you linked, you should choose the option for macOS Catalina (use the Finder). It also applies to macOS Big Sur and future versions of macOS.
EDIT: Credit to leroydouglas; there is a Device Support Update available for macOS Big Sur 11.6. It ensures that your Mac can communicate normally with iOS devices (presumably running iOS 15).
My Macbook pro is running Big Sur and qualifies per all the parameters on the page you sent.
