my watch but didn’t put it in lost mode for a week. Can someone else reset the watch and use my watch?

Not as long as the activation lock is on,don't unpair the watch from your phone,this removes the activation lock and read this page;

The lock was already on,when you pair a watch with a phone the activation lock is turned on by default on apple's server,the only way your watch can be accessed by anyone else is if they know your apple id.
