Create an Italicized Mac Mail Signature Bar

Once you've created your signature as outlined in Create and use email signatures in Mail on Mac, you can highlight the text you'd like to be italicized and press the Command + i keys to format it in italics. You can also press Command + i before typing your signature and that will allow to start typing in italics.
