signatures options don't appear in mac mail

the tab is there. the problem is in the actual email. the signature block that should appear in the email does not appear. in the signature pull down on the email there are two choices: none and edit signatures.

Does anyone know where those signatures are stored on the Mac?

My loss of signatures is fairly recent-- and I'm thinking I might get them back from Time Machine. I need to know where to look to do that!

The signature tab is missing from Mail > Settings?
