documents folder changing size

I am trying to clear some storage space. When I look at the 'documents' folder, it will sometimes be 6GB, but then it will change to 20GB, and back again, etc. I've noticed that this coincides with the 'Other' folder going from 32GB, all the way up to 60GB sometimes. This is really annoying as I can't find what's taking up the bulk of the documents folder, and I have no idea how to get rid of anything in 'Other'. Any help?

BTW I've got a Macbook Pro.

MacBook Pro 13″, macOS 10.15

Try something like OmniDiskSweeper for a GUI to get a good look at itemized file size and location:
