I created a solution for the old pages that search was not working at all on no matter what was tried.
Fortunately, the solution is easy to replicate.
I simply copied all the content from the non-working page and pasted it into a new page.
The same material, unchanged in any way, became searchable.
Problem solved.

Excellent! Thank you patrickfitz! I should have thought of that myself. I have encountered that kind of thing in corrupted files before. I need to add that procedure to my list of various computer problem fixes . . . before calling for help:

Apple is not paying attention as the product teams do not participate here. You have a Provide Pages Feedback menu item that goes directly to the Pages product team. They may or may not respond to your feedback.
I have the same problem but only with some documents.
Find and Replace is not working at all on some documents not what the settings are changed to.
I also sent a direct notice to Apple from Pages but got no reply,
No, you are not, and the issue may persist until the Pages product team issues another update, or never. Find/Replace works for me using two different approaches (if needed at all) with Pages v11.2 on macOS 11.6.

However, I do not think the files are or were corrupted, I think the new format for the new version of Pages is having trouble reading all of the information from previous versions of Pages.
No matter, the fix works.
I also should have thought of it sooner.
Good plan to add it to your list of fixes.
Depending on the Find/Replace settings, you may have to click the > button on the Find/Replace panel before it will light up the first found item. Or not, as it seems rather fickle about this.

There is no way for me to fix this,
Apple simply does not have the resources to reply to every product feedback that they receive. They have responded to me on a couple of occasions, and if they respond to you, it will be by email.
Yes, nothing important about have the basic function of search working in the word processor from a Trillion-dollar company.
Yes, who could expect a Trillion-dollar company to have enough resources to fix a product with their name on it in a timely fashion.
