Setting up mail as an IMAP - I do not see an option anywhere to leave a copy on the server

the way IMAP works is that the mail is always on the server

if it is deleted from 1 device it's deleted on the server and that means deleted on all devices using the imap account

it's the difference between IMAP and pop3
