Which Apple Watch is capable of working when it’s NOT near the iPhone?

Hi Fiery Jack. the real question is when the watch goes off your wrist, it needs to pair again with phone for it to work, so the article below isn't covering all the scenarios...... I am wondering how to use the basic watch features without having an iphone with a Data plan. I have an iphone and have the watch configured now, but what i ultimately want is to dissociate the phone from the watch (cut the apple cord, if you will)...... Use the watch to tell time and tell my heart rate and nothing more. Possible?
