How can I clear the cache of iTunes movie sync?

Thanks for the clarification.

With what you're seeing, this would be the list of Movies that you can sync to your iPhone from iTunes. With that being said, you can delete the Movies from the iTunes library which would then prevent them from appearing via the sync menu. For help with that, you'll want to view the section labeled "Delete movies and TV shows" of this resource:
