Hello! I have a problem on iOS 15 / WatchOS 8, my AppleWatch don’t update numbers at Stocks app. Updated to 15.0.2 / 8.0.1 and did factory reset on Watch, but this doesn’t resolve the issue, It is updated only when I am relaunched the app, please help me, thank you very much and have a nice day!

We understand that your Stocks app is not updating on Apple Watch. Remove the Stocks app from both iPhone and Apple Watch. Reinstall them both from the App Store. Remove built-in Apple apps from the Home screen on your iOS 10 device or Apple Watch.

I have the same problem, and tried the recommended reset/reinstall on my XS Max running iOS15.02 and it did not work. Upon reset/reinstall, my gen 1 watch does not show ANY stocks. It simply directs me to the stock app to add symbols... which do not sync to the phone.
I then reset the watch and paired it to my device (iphone 8) using iOS 14.8... and the stocks functionality works as expected.
Seems like the iOS15 update impacted the sync of the stocks app on my gen 1 watch.
