Menu Font still in White on Apple programs - Mac OS Big Sur 11.6

I'm experiencing the same problem with the Menu Bar font suddenly going to white recently, and it's happening on most of the Apple programs; Calendar, Mail, Numbers, Pages. It appears the recommended solution back in April 2021 was for users to change to a black or dark background, but surely that can't be the solution.
