Apple Music opens and starts playing when my Bose N700 headphones connect or change in bluetooth status ie come off a call, and/or amount of time.
How do I stop auto play?

My Sony WH-1000XM4 headphones pause the Apple Music player, or a movie playing in a web browser, when I remove them from my head, and playback resumes when I put the headphones back on. This is typical of the Bluetooth AVRCP/A2DP profile for remote control of devices and likely programmed in the headphone firmware. Unless the vendor provides smartphone software for tweaking these Bluetooth behaviors, there is unlikely to be any macOS settings available to change them.
