Numbers pivot table: how can I add rows/columns to customize calculations?

Have a new Mac and am delighted that Numbers now supports pivot tables. When in a pivot table, how can you add rows/columns to allow customizing calculations on the resultant table summary?

iMac 24″, macOS 11.6

A pivot table screen will not allow you to add rows or columns. Therefore you cannot add formulas to use that data without copying the PT to a new sheet for doing the analysis. When you refresh the PT data you have to copy it again to the workable sheet. Why can't the pivot table itself allow the row/column addition to permit the customized analysis?
